Easy No Oven Stovetop Pizza

Everybody loves pizza, but not everyone has got an oven at home. So what do you do when you’ve got a craving for some good old homemade pizza? Grab an iron skillet, a flour tortilla and your stove. Believe it or not, this is all you need to make your own thin-crust pizza.

Here’s how to do it.

Step 1: Buy a store-bought flour tortilla.

Using flour tortilla is the best way to make quick thin-crust pizzas. Just make sure that your flour tortilla fits perfectly at the bottom of your cast iron skillet. This is very important because flour tortillas don’t form a puffed, risen crust around the edge. Hence, there’s nothing preventing the sauce, cheese and toppings from sliding off. An iron skillet will contain the spillover nicely and will help form the browned cheesy edges, which is the best part.

Step 2: Oil and heat your skillet.

Add a little oil in the skillet and heat it on your stove over high heat. As soon as the oil starts to shimmer turn down the heat to low and wipe out the oil with a paper towel. This will help make the tortilla crispy without making it too greasy.

Step 3: Place a tortilla at the bottom of the skillet.

You’ll notice that the tortilla has small bubbles on one side and large bubbles on the other. Place the side with small bubbles at the bottom and the side with large bubbles facing up. This will help to make the bottom crust get crisper with more surface area.

Step 4: Add the sauce.

You can use a store-bought pizza sauce or a homemade one using pureed canned tomatoes seasoned with a little Italian seasoning and salt. Use a spoon to spread out the sauce and make sure it gets all the way to the edge of the tortilla.

Step 5: Cheese it.

Evenly spread grated mozzarella on the whole top surface. Make sure to keep it light with the sauce peeking through at least 50% of the whole surface area. You can add Parmigiano-Reggiano or Pecorino Romano for extra flavor.

Step 6: Top it.

Top your pie as desired. You can go simple and make a margarita-style pizza with just a drizzle of olive oil and a scatter of basil leaves or you can go all out and top it with sausage chunks, sliced pepperoni, mushrooms and diced pepper and onions.

Step 7: Bake the pie.

There are two ways to do this. You can place a lid over the skillet and really bake the pizza on your stove top for 3 to 5 minutes or until the cheese turns brown. Or you can stick the whole skillet under the broiler for 3 minutes. Then use an offset metal spatula to gently release the crisp cheese from the pan or until the pizza slides around easily. The pizza should easily slide out directly unto a cutting board.

Step 8: Enjoy.

You should be enjoying your pizza in 15 minutes or less.
